Boteco do França
Boteco do França is the long-running Rio Vermelho boteco repeatedly voted the best in Salvador, with cold beer, traditional petiscos, and personalized service that builds the regulars-club character. The space runs a small ground-floor room with a long bar along one side, indoor table seating, and the prime sidewalk tables along Rua Borges dos Reis that define the venue. The petiscos menu (Bahian small plates) is the kitchen's strongest offering: bolinho de bacalhau, queijo coalho grilled cheese skewers, caldinho de feijão (bean broth), pastéis de camarão, and Bahian-style fish portions all priced 25-50 BRL per plate. Drinks pricing is moderate: beer R$10-15, caipirinhas R$18-28. The crowd is heavy on long-time Rio Vermelho regulars, Brazilian visitors from other states, and a smaller foreign-traveler presence.

Full Review
Boteco do França sits on Rua Borges dos Reis in central Rio Vermelho, occupying a corner ground-floor space with a long bar along one wall, a few indoor tables, and the prime sidewalk seating along the building's frontage that runs maybe 15 tables. The interior runs unfussy: tile floor, white walls with framed photos from decades of regulars, and a small kitchen pass behind the bar.
The institutional character is real. The bar has been operating for years and has been repeatedly voted the best boteco in Salvador in local media polls. The regulars-club character defines the venue: many customers visit weekly, the staff knows faces and standard orders, and the conversation flows easily between tables across the sidewalk. New visitors are welcomed without ceremony.
Compared to the Vila Caramuru complex two minutes north, Boteco do França is smaller, more intimate, and runs a slower conversation pace. Compared to O Mais Amado Boteco on Largo da Mariquita, França is more polished and food-focused with a stronger petiscos menu. Within Rio Vermelho's boteco scene, França is the consensus pick for the classic experience.
The petiscos menu is the kitchen's strength. Bolinho de bacalhau (cod fritters), queijo coalho skewers grilled tableside, caldinho de feijão served in small ceramic cups, pastéis de camarão, and Bahian-style fish portions all priced R$25-50 per plate. The plates are sized for sharing across tables of three or four. The kitchen runs efficiently during the early-evening peak and slows during late-night.
