The setup includes outdoor terrace tables facing the beach, an indoor air-conditioned dining room for hotter days and evenings, and a separate bar counter that handles drink service for both restaurant patrons and visitors stopping in for cocktails before moving to the main beach club party.

The Mediterranean menu is the venue's defining feature. Pasta, risotto, grilled seafood, lamb, and the standard Italian and Mediterranean dishes appear alongside a smaller Vietnamese section. The kitchen produces legitimate restaurant-quality food rather than the standard beach-bar fare. Pricing runs 250,000-500,000 VND for mains, which is fair for the quality and slot at the upper end of Nha Trang restaurant pricing.

The bar program runs proper cocktails alongside wine and standard mixers. The pricing matches the polished restaurant context: cocktails 150,000-280,000 VND, wine 200,000-400,000 VND per glass. The wine list runs surprisingly deep for a beach club restaurant, with reasonable selections across European and New World labels.

The crowd at Sandals is older, more couple-oriented, and more dinner-focused than the main Sailing Club party crowd. Many patrons use Sandals as the dinner venue before transitioning to the late-night beach club party next door; the transition is natural since the two venues share the same Sailing Club property. Reservations help during peak evenings, particularly for the terrace tables with beach views at sunset.
