Cafe del Mar
Cafe del Mar is the bar that launched an entire musical genre. Since 1980, this sunset-facing spot on San Antonio's west coast has been the place where DJs played ambient, downtempo, and balearic music as the sun dropped into the Mediterranean. The compilation albums released under the Cafe del Mar name went global and defined what people mean when they say 'chillout music.' The bar itself is modest: an open terrace with seating oriented toward the water, a bar inside, and a DJ booth where the music stays deliberately calm. Drinks run EUR 10-14 for cocktails, EUR 6-8 for beer. The sunset ritual is the main event. People start claiming spots by 7 PM in summer, and by 8 PM the terrace is full and the crowd extends along the waterfront promenade. When the sun touches the horizon, the DJ matches the moment with the music, and if you're cynical about such things, this might be the place that changes your mind. After sunset, the energy stays mellow. This isn't a pre-club venue; it's a destination for the sunset experience itself. The bar closes relatively early by Ibiza standards.

Full Review
The approach to Cafe del Mar along the San Antonio waterfront promenade builds anticipation. Other sunset bars line the strip, but this is the one everyone walks toward. The terrace is open to the water with tiered seating that gives most spots a clear view of the horizon. The DJ booth sits unobtrusively to one side.
The music is the link between a beautiful sunset and an emotional experience. On my visit, the DJ played a set that started with deep ambient textures and gradually introduced beats and melody as the sky changed color. The timing was practiced and perfect. When the sun disappeared and the crowd clapped, the DJ dropped a classic balearic track that had half the terrace smiling.
Drinks are priced above mainland Spain but below the superclubs. A cocktail was EUR 12 and decently made. The bar staff work fast during the sunset rush but slow down afterward as the crowd thins. Food options are limited to snacks.
Cafe del Mar is best understood as a ritual rather than a bar. You come for the sunset, you listen to the music, you have a drink or two, and then you move on. Trying to make it a full evening destination doesn't quite work because the whole concept peaks at sundown and gently deflates afterward. But that peak is worth arranging your day around.
