Paspatur won me over within 20 minutes. I walked in expecting a standard tourist bar and found a genuine neighborhood hangout that happens to sit inside a 500-year-old courtyard. The musician on stage, a Turkish guy with an acoustic guitar and a voice that carried effortlessly, was playing Baris Manco covers when I arrived and transitioned into Pink Floyd without missing a beat.
I ordered a mojito (TRY 220) that was properly made, not the sugary tourist version. The bar uses fresh mint from pots growing along the courtyard wall, which is a nice detail. A second drink, a gin and tonic, was equally solid. Food options are limited but the mixed meze plate at TRY 120 paired well with drinking.
What surprised me was how mixed the crowd was. A Turkish family celebrating a birthday at one table. A group of Australian backpackers at another. An older German couple who told me they'd been coming back every summer for five years. Everyone talked to everyone. The musician took requests and somehow knew every song shouted at him.
