Soneva staffs the position with genuine experts who can calibrate their approach to everything from curious beginners to collectors who own their own vineyards. Standard tastings include five wines with paired cheeses, many of which Soneva produces in their own cheese room on the island. As a nightlife experience, 15 Below is about as far from a nightclub as possible. But within the Maldives context, where conventional nightlife doesn't exist, it fills the role of an evening destination with real sophistication.
