The Alchemist Spinningfields
The Alchemist started in Manchester in 2010 and has since expanded across the UK, but the Spinningfields location at 3 Hardman Street remains the flagship. The bar is known for theatrical cocktails served with dry ice, color-changing ingredients, and presentation that prioritizes spectacle alongside flavor. The space is large and modern, with floor-to-ceiling windows, copper fittings, and a long bar where you can watch the show. Cocktails cost GBP 10-15 and the menu runs deep, with sections organized by flavor profile. Food is available all day: brunch, lunch, and dinner menus cover everything from avocado toast (GBP 9) to steaks (GBP 22-30). The after-work crowd fills the venue from 5 PM on weekdays, and weekend evenings require a reservation for tables.
What to Expect
A large, modern cocktail bar with a menu built around visual spectacle. Expect dry ice, color changes, and unusual glassware. The food is above-average bar food. The crowd is professional and well-dressed, especially on weekday evenings when Spinningfields office workers fill the space.
Slick, social, and slightly performative. The cocktails are designed to be photographed as well as drunk. The energy is buzzy after work and gradually shifts to a more relaxed weekend vibe. Spinningfields provides a different atmosphere from Manchester's grittier nightlife zones.
Background DJ sets on weekends. House, disco, and commercial music at a volume that allows conversation.
Smart casual. Spinningfields is Manchester's business district, and the crowd reflects that. Jeans are fine, but the overall feel is more polished than the Northern Quarter.
Groups who enjoy cocktail theater, after-work drinks in a polished setting, and weekend brunch with friends. Dates work well here if you're looking for something more upscale than a pub.

Full Review
Spinningfields is Manchester's business and professional district, all glass towers and corporate restaurants. The Alchemist fits this environment perfectly. The interior is clean-lined and modern, with enough visual interest (copper pipes, exposed bulbs, a open bar display) to keep things from feeling sterile.
The cocktails are the reason people come. Each drink is a small performance: dry ice billowing from a flask, a clear liquid turning pink when citrus is added, or a drink served in a beaker that bubbles as you watch. The theatrical element is the brand's signature, and the Spinningfields bar executes it well. Behind the spectacle, the cocktails are properly balanced. The bar team has genuine skill, and the flavor profiles hold up once the visual tricks fade.
The food menu is more substantial than most cocktail bars offer. Brunch items (pancakes, eggs benedict, the inevitable avocado toast) are well-prepared at GBP 9-15. The dinner menu includes steaks, burgers, and sharing plates at GBP 12-30. Quality is consistent, and the kitchen operates throughout the day.
The after-work crowd defines the weekday experience. From 5 PM on Thursday and Friday, every table fills with groups from the surrounding offices. The atmosphere is social and celebratory, a release valve for the professional district. Weekends draw a different crowd: couples, friend groups, and visitors exploring the city.
The main criticism is that The Alchemist prioritizes style. If you prefer your cocktails without the dry ice and your bar without the Instagram positioning, the Northern Quarter's smaller venues offer more substance with less theater. But for what it sets out to be, the Spinningfields Alchemist delivers.
