La Taberna de Dolores occupies a beautifully restored colonial building on the corner of Parque Dolores, with a cobblestone inner patio, a stone well, and a wraparound upstairs veranda. The architecture is genuinely impressive: colonial-era details preserved with care, and two balconies offering different perspectives. One faces the park and its street life; the other overlooks the interior courtyard and the musicians.
The kitchen serves proper Cuban food: congris, fried pork, and traditional plates executed well. Live son, bolero, and traditional Cuban music runs most evenings, performed by musicians who play in the courtyard where the acoustics of stone walls do the sound engineering for free. The crowd is mostly Cuban, with visitors who've wandered off the Calle Heredia circuit.
La Taberna combines three things that Santiago does well: colonial architecture, traditional cooking, and live music. No other venue in the city integrates all three as effectively. The restaurants near Parque Cespedes are more tourist-oriented. The music venues on Heredia don't serve food this good. La Taberna merges the experiences.
