Wahoo's doesn't try to be cool, and that's exactly why it works. The bar occupies a covered open-air space on Barrier Reef Drive with the kind of no-frills setup that suits a Caribbean island. Ceiling fans spin overhead, the concrete floor has seen better decades, and the bar counter is worn smooth from years of elbows and condensation rings.
The Chicken Drop is the main event. Every Wednesday around 7:30 PM, a live chicken is placed on a numbered board. Patrons buy squares for BZD 2 each. The chicken wanders, the crowd cheers, and eventually nature takes its course. The winner collects the pot, which can reach BZD 200-300 on busy nights. It's absurd, it's hilarious, and it's been running for years. The evening has a community feel, with regulars explaining the rules to newcomers and everyone united in the shared ridiculousness.
Beyond Wednesdays, Wahoo's is a solid everyday bar. Belikin beer is always cold, rum drinks are strong and cheap, and the bartenders are practiced conversationalists. The regulars include a mix of expats who moved to Ambergris Caye years ago and locals who've been coming since the place opened. Newcomers get folded into the group quickly.
Compared to Jaguar's Temple Club down the road, Wahoo's is about socializing rather than dancing. Compared to Palapa Bar, it's on land rather than over the water.
