Understanding the maquis format is essential to enjoying it: you sit at a communal table, order from the grill, and participate in whatever social energy surrounds you.
The food is the anchor. The grill produces whole tilapia that arrives blackened and smoky, served with attieke and a fiery pepper sauce. The fish is fresh, the cooking is expert, and the combination of flavors is one of the best food experiences in West Africa. Poulet braise (braised and grilled chicken) is the alternative for non-fish eaters, prepared with the same care and served with similar accompaniments.
Beer is Flag, served so cold that ice crystals form on the bottle. At XOF 1,000-1,500 per bottle, you can drink all evening without concern for budget. The simplicity of the offering, cold beer, grilled protein, good company, is the maquis formula, and it works because nothing is wasted on pretension.
