The space is designed for the wines. The lighting highlights the bottles. The marble bar is wide enough for a flight of six glasses plus tasting notes. The staff, many with sommelier training, can match your palate to a region in three questions. Tell them you like Burgundy and they'll pour you a cool-climate Pinot from Casablanca. Say you want something unique and they'll reach for a Pais from Itata.
