The whole thing could easily be cheesy, but three decades of continuous operation have given it the kind of authenticity that new themed restaurants cannot fake.

The crowd shifts with the clock in predictable patterns. Daytime brings families and office workers grabbing comfort food. Late night, it is the P. Burgos crowd stopping in for recovery meals between bar hops or at the end of a long evening. The food is hearty American-Filipino fare: burgers, steaks, breakfast plates, and portions sized for people who have not eaten since lunch.
